1 block of firm tofu

10g garlic, grated

10g ginger, grated

4 tbsp sweet soy sauce

150g potato starch

30g baking powder

Vegetable oil, enough for deep frying

GARLIC MAYO

30ml aquafaba (canned chickpea liquid)

100ml sunflower oil

1 garlic clove

handful of fresh coriander leaves

TERIYAKI MUSHROOMS

2 tbsp toasted sesame oil

2 sping onions, chopped

250g shitake mushrooms

2 tbsp teriyaki sauce

1/2 tsp chilli flakes

Garnish

1/4 cucumber, seeds removed

fresh coriander leaves

chopped spring onions
