CHICKPEA SCRAMBLE
So you've probably heard of tofu scramble but lets get experimental wih it! For various reasons, many of us prefer to not eat soy and therefore, do not eat tofu. This is chickpea scramble is a great alternative: the texture is similar and with the nutritional yeast, it can help curb those cravings for that morning cheesy omelette.
INGREDIENTS
1/4 cup chickpea/gram flour
1 tbsp nutritional yeast
1/3 cup non-dairy milk (almond works best)
1/4 tsp garlic granules
1/4 tsp onion granules
1/8 tsp pink salt
Pinch of black pepper
METHOD
Heat a small frying pan on a medium heat with some coconut oil ( or alternative frying oil).
2. In a mixing bowl, whisk together all the ingredients until combined.
3. Add to the frying pan to form a large pancake. cook until the edges begin to dry up and then use a spatula to break up the pancake as if cooking scrambled eggs. Continue to do so until the mixture drys up and begins to form clumps. Cook until the mixture is fairly dry but soft and not too browned.
4. Serve immediately over toast with avocado or as you wish.
