FOOLPROOF PANCAKES
INGREDIENTS
125g self raising flour
35g caster sugar
1 tsp bicarbonate of soda
150ml oat milk
1 tsp cider vinegar
METHOD
1. Whisk together all your ingredients in a mixing bowl until smooth.
2. Leave to rest for 5 minutes.
3. Heat a frying pan to a medium heat. Add a drizzle of neutral oil (sunflower or coconut oil works well).
4. Scoop 1/4 cup of batter to your pan.
5. Cook for 3 mins, or until there are lots of bubbles (important!)
6. Flip and cook for a further 3 mins.
7. Serve as you wish!
I enjoyed my pancakes with mixed berry compote, which is included in my e-book. There also go great with some maple syrup, vegan bacon, or fresh fruits!
