ALMOND FRENCH TOAST
You can use pretty much any bread as long as you dry it out enough. Gail’s Marzipan Cholla works so well, especially if rose water is used. If you’re using a fruit bread a sweet bread that’s a bit more moist, then cut into beforehand and dry it out. The french toast is topped with coconut whip, fresh blueberries and strawberries, agave nectar and fresh mint.
INGREDIENTS
1 cup vanilla almond milk (almond breeze)
2 tsp rose water (optional)
1 tsp vanilla extra
2 tsp flaxseed meal + 4 tsp water
1 tbsp all purpose flour
1 tbsp nutritional yeast
1/4 tsp nutmeg
1/4 tsp cinnamon
4-6 slices brioche or challah bread
METHOD
1. In a small bowl, mix the flaxseed meal and water and then set aside for at least 10 minutes.
2. Preheat a frying pan on a medium heat.
3. In a mixing bowl, combine the milk, rose water, vanilla, flax egg, flour, nutritional yeast, nutmeg and cinnamon.
4. Add roughly 1 tbsp coconut oil to the heated frying pan. dip bread slices into the wet mixture on both sides (don’t coat the slices in too much mixture otherwise it will come out soggy).
4. Add to the frying pan and fry on each side for 3-5 mins or until golden brown.
Serve as you wish.
NOTES
If you’re using a fruit bread or a sweet bread that’s a bit more moist, then cut into beforehand and dry it out.
I like to enjoy my french toaste with some coconut whipped cream, fresh fruit and agave nectar.
