INGREDIENTS

garlic cloves

3 Scotch bonnet peppers (seeded and cored), or more for a hotter sauce

2 tbsp fresh thyme leaves

2-3 spring onions

4 tbsp ground allspice/pimento berries

3 tbsp packed coconut sugar (or brown sugar)

1 tsp cinnamon

1 tsp nutmeg

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp smoked paprika (optional)

2 tbsp liquid aminos/soy sauce (or coconut aminos for a smokey taste)

2 tsp olive oil

METHOD

IF YOU HAVE A PESTAL AND MORTAL, USE THAT TO CRUSH INGREDIENTS TOGETHER, ADDING LIQUID AMINOD AND OIL GRADUALLY.

OTHERWISE, ADD ALL INGREDIENTS TO A HIGH-SPEED FOOD PROCESSOR. BLITZ UNTIL EVERYTHING IS COMBINED. ADD MORE OLIVE OIL TO COMBINE INGREDIENTS IF NECESSARY.

STORE IN SAUCE IN THE FRIDGE FOR UP TO ONE WEEK.
