OKRA SWEET POTATO CURRY
INGREDIENTS
2 tbsp olive oil
1 small white onion
4 garlic cloves
4-5 sprigs of fresh thyme
1 tomato
1 medium sweet potato
2 tbsp Jamaican (or other) curry powder
1 tsp all purpose seasoning
1/2 tsp ground turmeric
1/4 tsp ground all spice
1/4 tsp ground ginger
1/4 tsp ground black pepper
1 scotch bonnet pepper
400ml full-fat coconut milk (canned)
200g okra
1 tbsp chopped coriander
METHOD
1. Heat the oil to medium heat. Sweat onions, garlic, fresh thyme and sweet pepper until soft.
2. Add chopped sweet potato and seasonings. Cook for 5 mins.
3. Add tomatoes, coconut milk, water and scotch bonnet. Bring to medium simmer and cook until sweet potato is soft (approx 20mins). Stir occasionally.
4. Mash up the sweet potato slightly to thicken the sauce. Add okra and cook for 5 mins.
5. Take off the heat. Stir in the chopped coriander and serve.
