(SWEET)

Plantain fritters
 

GROWING UP, MY MUM MADE BANANA FRITTERS ALL THE TIME AND THEY WERE MY ABSOLUTE FAVOURITE. EVEN THOUGH PLANTAIN FRITTERS ARE COMMON IN THE CARIBBEAN, I DIDNT EAT THEM THAT OFTEN. BUT THEY’RE THE TASTIEST TREAT. WHETHER YOU EAT THEM AS A SNACK OR AS A DESSERT, YOU’LL BE MORE THAN PLEASED.

BE SURE TO USE PLANTAINS THAT ARE TURNING BLACK. THE DARKER THE PLANTAINS, THE SWEETER THE FRITTERS.

INGREDIENTS

MAKES 4 MEDIUM FRITTERS

1 ripe plantain mashed

1/2 cup ALL PURPOSE flour

1/2 cup almond milk (or other plant-based milk)

1/2 tsp cinnamon

1/4 tsp nutmeg

2 tbsp coconut sugar

1/2 tsp vanilla extract

2 TBSP GRAPESEED OIL

METHOD

WASH AND PEEL PLANTAIN. PLACE IN A MIXING BOWL AND MASH WITH A FORK.

ADD REMAINING INGREDIENTS, EXCEPT OIL, TO PLANTAIN AND WHISK TOGETHER UNTIL COMBINED.

HEAT UP FRYING PAN TO MEDIUM-HIGH HEAT. ADD OIL TO PAN.

ADD 1/4 CUP FRITTER MIXTURE TO HEATED PAN AND FRY ON EACH SIDE FOR 3 MINS OR UNTIL BROWNED.

SERVE IMMEDIATELY.
