MULTI-SEED VEGGIE PIZZA

I’ve been wanting to try a yeast-free, gluten-free pizza crust for the longest and finally here it is, topped with smokey mushrooms, charred peppers, onions, kalamata olives and homemade tomato base. The crust is made with chia seeds, buckwheat flour, pumpkin seeds sunflowers seeds plus some herbs and seasonings. This pizza is packed with nutrients and so much flavour from only natural ingredients. I finished it off with fresh basil and a sprinkle of @handsonearth_ black olive salt that I found when I was in Lisbon!

INGREDIENTS

PIZZA CRUST

1/4 cup chia seeds (whole)

3/4 cup water

3 tbsp buckwheat flour

1 tsp oregano

1/2 tsp garlic granules

1/2 tsp onion granules

1 tsp salt

1 tbsp sunflower seeds

1 tbsp pumpkin seeds

BASE SAUCE

3 tbsp tomato paste

1/2 tsp garlic granules

1/4 tsp onion granules

1/4 tsp oregano

1/4 tsp thyme

TOPPINGS

250g chestnut mushrooms

2 garlic cloves

2 tbsp liquid aminos (or soy sauce)

1/2 tsp smoked paprika

1/4 tsp cayenne pepper

1 red onion

1 bell pepper

1-2 tbsp kalamata olives (optional)

Handful of fresh basil (optional)

METHOD

preheat the oven to 175C. Line a baking tray with greaseproof paper and set aside.

Add the chia seeds, water, buckwheat flour, oregano, garlic granules, onion granules and salt to a mixing bowl and stir well.

Add the sunflower and pumpkin seeds and continue to mix until completely combined.

Spread out the mixture onto the lined baking tray and form the dough into a circle or rectangle.

Bake for 30-40 mins. while the crust is cooking, prepare the toppings.

Slice mushrooms, red onion and bell peppers.

Heat a frying pan with a little oil on a medium heat and then, sauté the mushrooms. As the mushrooms begin to soften, add the garlic, liquid mains (or soy sauce), smoked paprika, cayenne pepper. once cooked, set aside.

Next, heat a griddle pan with a little oil. Add the peppers, and red onions and fry until they begin to brown in some areas.

In a small bowl, mix together the tomato paste, garlic granules, onion granules, oregano and thyme.

Remove the pizza crust from the oven and spread over the tomato paste. add the vegetables (including the olives) and then bake for a further 10 mins.

Sprinkle over some fresh basil over the pizza before serving.
