METHOD
preheat the oven to 175C. Line a baking tray with greaseproof paper and set aside.
Add the chia seeds, water, buckwheat flour, oregano, garlic granules, onion granules and salt to a mixing bowl and stir well.
Add the sunflower and pumpkin seeds and continue to mix until completely combined.
Spread out the mixture onto the lined baking tray and form the dough into a circle or rectangle.
Bake for 30-40 mins. while the crust is cooking, prepare the toppings.
Slice mushrooms, red onion and bell peppers.
Heat a frying pan with a little oil on a medium heat and then, sauté the mushrooms. As the mushrooms begin to soften, add the garlic, liquid mains (or soy sauce), smoked paprika, cayenne pepper. once cooked, set aside.
Next, heat a griddle pan with a little oil. Add the peppers, and red onions and fry until they begin to brown in some areas.
In a small bowl, mix together the tomato paste, garlic granules, onion granules, oregano and thyme.
Remove the pizza crust from the oven and spread over the tomato paste. add the vegetables (including the olives) and then bake for a further 10 mins.
Sprinkle over some fresh basil over the pizza before serving.
