THis recipe is especially for those who can’t eat store-bought meat substitutes due to the gluten content. These gorgeous bites were made using oyster mushrooms, coated in my homemade fry mix. The waffles are oven-baked, made using buckwheat flour. Finish these waffles off with a drizzle of maple syrup and sprinkle of parsley. Everything is completely soy, gluten and wheat free and they’re super easy to make. And if you don’t have a waffle iron or mould, just make some pancakes!

 

Ingredients

 

Vegan Buttermilk

 1 cup almond milk

1 tsp lemon juice (or apple cider vinegar)

Crispy fry mix

1 cup buckwheat flour (or any gluten-free flour blend)

1/2 tsp garlic granules, onion granules, pink salt, dried thyme, cayenne pepper, smoked paprika

1/4 tsp dried oregano, turmeric powder

1/8 tsp black pepper

1 tbsp nutritional yeast (optional)

Waffles

 1 cup almond milk

3 tbsp coconut oil

1 tsp vanilla bean pasta or extract

1-2 tbsp maple syrup (or other liquid sweetener like agave)

1 cup buckwheat flour (or gluten-free alternative flour)

1 tsp baking powder

 

 

 

METHOD
