VEGAN CHURROS
INGREDIENTS
60ml sunflower oil (plus more for frying)
45g golden caster sugar
455g water
330g plain flour
70g caster sugar
1 tbsp cinnamon
Dark chocolate or vegan chocolate spread, melted
METHOD
Add the oil, sugar and water to a medium saucepan. Bring to the boil.
Take off the heat and add the flour. Stir until a soft dough forms.
Add enough sunflower oil to a large pot, roughly 3-4 inches deep. Bring to 190C or until a piece of dough vigorously sizzles and rises to the top.
While the oil heats up, add the remaining sugar and cinnamon to a bowl and mix together.
Transfer the dough to a piping bag and create long churro shapes.
Fry 3-4 churros at a time, until golden brown. Transfer to a cooling rack with paper towel.
Toss the churros in the cinnamon sugar while they are still warm.
Melt your chocolate or vegan chocolate spread in the microwave. Serve with your churros immediately.
