PLANT-BASED CHEESE SAUCE

The sauce uses nutritional yeast to achieve that signature nutty cheesy flavour and cashew nuts. It works well with pasta - use this sauce in place of my cheesy white sauce for Mac n cheese. try it on top of tacos and of course, fully loaded nachos!

INGREDIENTS

1/3 cup sweet potato, mashed

1/3 cup cooked butter beans 

1/3 cup cashew nuts 

1/3 cup nutritional yeast

2 medium garlic cloves

1 tsp turmeric

1/2 tsp cumin, smoked paprika, garlic granules (optional), pink salt

METHOD

Soak the cashew nuts overnight or at least 6 hours. If you are pushed for time, soak them in boiling hot water for 30 mins. 

Place the sweet potatoes on a tray lined with foil and then place them in the middle of the oven. Bake for approx. 45 mins at 220C. The skins will come away from the flesh and the potato will be soft. Allow the potatoes to cool. peel potatoes and mash until completely smooth.

mesure 1/3 cup mashed sweet potato. Add all the ingredients to a high speed food processor and blend until smooth. Gradually add some almond milk, if needed.
